Portuguese Fried Rice

Ingredients:

3 cups cooked rice (preferably day-old) *
0.33 lb chorizo, sliced**
2 tablespoons olive oil
1 small onion, finely chopped (I like onion and bell pepper. Since I added more rice, I used a medium onion and full pepper)
3 garlic cloves, minced
1/2 red bell pepper, diced
1/2 cup peas
2 eggs, lightly beaten***
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (Didn’t use this)

Directions:

Heat olive oil in a large pan or wok over medium heat.
Add sliced chorizo and cook until crispy and fragrant. Remove and set aside.
In the same pan, sauté onion and garlic until soft and translucent.
Add red bell pepper and peas, cooking for 2–3 minutes.
Push vegetables to one side and pour in beaten eggs, scrambling until just set.
Add the cooked rice, breaking up any clumps, and mix well.
Stir in soy sauce, oyster sauce, and smoked paprika, ensuring everything is evenly coated.
Return chorizo to the pan and mix thoroughly.
Season with salt and pepper as needed.
Garnish with fresh parsley and serve hot.

*I am not sure if I had exactly 3 cups. I just used what was left from when I last made rice. It may have been a little more or a little less. I threw in a bag of cauliflower rice, too. This caused me to double the soy/oyster-sauce/paprika mix.
**In the original picture, the “chorizo” looked like a sausage. I grabbed a Mexican chorizo at the store yesterday. When I fried up the chorizo, it was far less meat than was needed. I grabbed a stick of caseless andouille sausage (about a foot long) and cooked that in the chorizo juices. It coated it all pretty well and helped circulate that flavor throughout
***I cooked the eggs at the beginning and put them in a bowl to be added later. Cooking them with the veggies didn’t seem right to me.
