Cream Wafers

1 C soft butter
1/3 C whipping cream
2 C flour

mix, cover & chill overnight roll 1/3 of dough at a time on floured surface to about 1/8 in. thick. cut out 1-1 1/2 in circles (I use the opening to a babyfood jar). Prick with fork 4 times. Bake 7-9 minutes Make into sandwiches with icing in between 2 rounds.


1/4 C margarine (butter dries out & gets crunchy)
3/4 C powdered sugar
1 t vanilla

Cream & beat until fluffy, color with a few drops of food coloring (I double the icing recipie) Makes about 45 cookies
