Chocolate Zucchini Muffins

1 1/2 cup flour
3/4 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1/4 cup milk
1 Tbl lemon juice
1 tsp vanilla
1 cup shredded zucchini
1/4 cup mini-choc-chips

Beat wet ingredients.  Fold into dry ingredients. Fold in zucchini and chips.  Bake at 350° for 20-25 minutes.  Makes 1 dozen.

This recipe doubles easily.
